Ingredients

  • ½ cup black beans, drained and rinsed

  • 2 tortillas

  • ½ cup salsa
  • 1 egg, beaten
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the shrimp, rice, black beans, cheese, and taco seasoning.
  3. Place a portion of the mixture onto each tortilla, roll it up tightly, and seal the edges.
  4. Dip each roll in beaten egg, then coat with breadcrumbs.
  5. Place on a baking sheet and bake for 15-20 minutes until golden brown.
  6. Serve with salsa on the side.
