- 1 pound shrimp, peeled and deveined
- 1 cup cooked rice
- ½ cup black beans, drained and rinsed
- 1 cup shredded cheese
- 2 tortillas
- 1 tablespoon taco seasoning
- ½ cup salsa
- 1 egg, beaten
- 1 cup breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the shrimp, rice, black beans, cheese, and taco seasoning.
- Place a portion of the mixture onto each tortilla, roll it up tightly, and seal the edges.
- Dip each roll in beaten egg, then coat with breadcrumbs.
- Place on a baking sheet and bake for 15-20 minutes until golden brown.
- Serve with salsa on the side.
Notes
- Serve with a side of guacamole for extra flavor.
- These can be made ahead of time and frozen before baking.
