- 2 medium zucchini
- 1 cup breadcrumbs

- 1 cup mayonnaise
- 1/4 cup fresh basil

Instructions
- Preheat the oven to 425°F (220°C).
- Slice the zucchini into thin rounds.
- In one bowl, beat the eggs. In another bowl, mix breadcrumbs with salt and pepper.
- Dip each zucchini slice into the egg, then coat with breadcrumbs.
- Place the coated zucchini on a baking sheet and bake for 20 minutes until golden and crispy.
- Meanwhile, mix mayonnaise, finely chopped basil, and lemon juice in a bowl to make the basil mayo.
- Serve the crispy zucchini chips with basil mayo on the side.
Notes
- For extra crunch, try adding Parmesan cheese to the breadcrumb mixture.
- Make sure the zucchini slices are evenly cut for consistent baking.
