- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/4 cup brown sugar, for topping
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a baking pan.
- In another bowl, beat the cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in vanilla and salt.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for about 50-60 minutes, until set.
- Remove from the oven and let cool. Refrigerate until completely chilled.
- Before serving, beat heavy cream and brown sugar until stiff peaks form. Spread over the chilled cheesecake.
- Using a kitchen torch, carefully caramelize the brown sugar topping until golden and bubbly.
- Slice and serve chilled.
Notes
- For best results, allow the cheesecake bars to chill overnight for the best flavor.
- Be careful when using the kitchen torch to caramelize the sugar.
