  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup brown sugar, for topping

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a baking pan.
  3. In another bowl, beat the cream cheese and granulated sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla and salt.
  5. Pour the cream cheese mixture over the crust and smooth the top.
  6. Bake for about 50-60 minutes, until set.
  7. Remove from the oven and let cool. Refrigerate until completely chilled.
  8. Before serving, beat heavy cream and brown sugar until stiff peaks form. Spread over the chilled cheesecake.
  9. Using a kitchen torch, carefully caramelize the brown sugar topping until golden and bubbly.
  10. Slice and serve chilled.
