- 4 cups broccoli florets
- 1 cup diced turkey bacon
- 1 onion, chopped
- 2 cups vegetable broth
- 2 cups cheddar cheese, shredded
- 1 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
Instructions
- In the Crock Pot, combine broccoli, turkey bacon, onion, and vegetable broth.
- Cook on low for 6 hours or high for 3 hours.
- Stir in cheddar cheese and milk; cook for an additional 30 minutes.
- Mix cornstarch with a little water and stir into the soup to thicken.
- Season with garlic powder, black pepper, and salt to taste.
Notes
- For a creamier soup, blend part of the soup with an immersion blender.
- Feel free to add other vegetables like carrots or potatoes.
