- 4 cups broccoli florets
- 1 cup carrots, diced
- 1 cup celery, chopped
- 1 medium onion, diced
- 4 cups vegetable broth
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 8 ounces cream cheese
- 2 cups shredded cheddar cheese
- 4 slices turkey bacon, cooked and crumbled
Instructions
- Combine broccoli, carrots, celery, and onion in the slow cooker.
- Add vegetable broth, garlic powder, paprika, and black pepper.
- Cook on low for 4-6 hours or until vegetables are tender.
- Stir in cream cheese until melted.
- Add shredded cheddar cheese and stir until cheese is melted and soup is creamy.
- Top with crumbled turkey bacon before serving.
Notes
- For a thicker soup, use an immersion blender to blend some of the vegetables.
- Feel free to add extra spices to taste.
