- 3 pounds beef chuck roast
- 1 can cranberry sauce
- 1 cup shallots, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon olive oil
Instructions
- In a skillet, heat olive oil over medium heat and sear the beef roast until browned on all sides.
- Place the roast in the crockpot and add cranberry sauce, shallots, garlic, salt, pepper, and rosemary.
- Cover and cook on low for 8 hours or until the meat is tender.
- Serve warm with the sauce and garnish with additional rosemary if desired.

- For added flavor, consider marinating the roast overnight.
- Serve with mashed potatoes and green beans for a complete dinner.
