Crockpot French Onion Meatloaf with Melted Swiss Cheese

Ingredients

  • 1/4 cup milk
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 ½ lbs ground beef (80/20 or leaner)
  • 1 packet dry French onion soup mix
  • 1/2 cup plain breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup chopped fresh parsley (optional)
  • 1 cup caramelized onions
  • 1 cup shredded or sliced Swiss cheese
  • Optional garnish: extra parsley, crispy fried onions

Instructions

  1. In a large bowl, combine ground beef, soup mix, breadcrumbs, milk, eggs, Worcestershire, garlic powder, pepper, and parsley. Mix gently.
  2. Shape the mixture into a loaf and place it in a parchment-lined or greased crockpot.
  3. Top the loaf with caramelized onions.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until internal temp reaches 160°F (71°C).
  5. About 10–15 minutes before serving, add Swiss cheese on top. Cover and let melt.
  6. Let the meatloaf rest for 10 minutes before slicing. Serve warm with your favorite sides.

Notes

  • Use parchment paper for easy cleanup.
  • Gruyère or provolone can be substituted for Swiss.
  • Leftovers make great sandwiches.
