- 2 medium cucumbers
- 8 ounces cream cheese
- 2 tablespoons fresh dill, chopped
- 1 tablespoon chives, chopped
- 1 tablespoon parsley, chopped
- 1 teaspoon garlic powder
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Start by slicing the cucumbers into 1/2 inch thick rounds.
- In a bowl, mix the cream cheese, dill, chives, parsley, garlic powder, salt, and pepper until well combined.
- Using a piping bag or a spoon, dollop the herbed cream cheese onto each cucumber slice.
- Top each bite with a halved cherry tomato.
- Arrange the cucumber bites on a serving platter and serve immediately.
Notes
- For a spicier version, add a pinch of red pepper flakes to the cream cheese mixture.
- These can be prepared a few hours in advance; just keep them chilled until serving.
