Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons peppermint extract
  • 1 cup chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon green food coloring

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, eggs, and peppermint extract. Beat on medium speed for 2 minutes until smooth.
  4. Stir in chocolate chips and pour the batter into prepared pans.
  5. Bake for 30-35 minutes or until a toothpick comes out clean.
  6. Cool in pans for 10 minutes, then remove and let cool completely on wire racks.
  7. For the frosting, whip heavy cream with powdered sugar and green food coloring until stiff peaks form.
  8. Frost the top of one cake layer, place the second layer on top, and frost the entire cake.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Adjust the mint flavor to taste.
