- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons peppermint extract
- 1 cup chocolate chips
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- ½ teaspoon green food coloring
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, vegetable oil, eggs, and peppermint extract. Beat on medium speed for 2 minutes until smooth.
- Stir in chocolate chips and pour the batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then remove and let cool completely on wire racks.
- For the frosting, whip heavy cream with powdered sugar and green food coloring until stiff peaks form.
- Frost the top of one cake layer, place the second layer on top, and frost the entire cake.
Notes
- For a richer flavor, use dark chocolate chips.
- Adjust the mint flavor to taste.
