Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine chocolate cookie crumbs and melted butter; press into the bottom of a springform pan.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped cream until well combined; pour over the crust.
- Bake for 30 minutes; let cool, then refrigerate for at least 4 hours.
- Top with cherry pie filling and chocolate shavings before serving.
Notes
- For a richer flavor, use dark chocolate cookie crumbs.
- Let the cheesecake sit in the fridge overnight for best results.
