- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 large eggs
- 1 cup milk
- 2 tablespoons sugar
- 2 cups diced fresh peaches
- oil for frying
Instructions
- In a large bowl, mix the flour, baking powder, salt, and cinnamon together.
- In another bowl, whisk together the eggs, milk, and sugar.
- Combine the wet and dry ingredients until just mixed.
- Fold in the diced peaches.
- Heat oil in a deep pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, frying until golden brown.
- Remove and drain on paper towels.
- Serve warm with powdered sugar or your favorite dipping sauce.
Notes
- For added flavor, consider adding a dash of nutmeg.
- These fritters can also be served with a scoop of vanilla ice cream.
