- 1 leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons rosemary, dried
- 1 teaspoon thyme, dried
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup red wine
- 2 cups vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the garlic, olive oil, rosemary, thyme, salt, and black pepper.
- Rub the mixture all over the leg of lamb.
- Place the lamb in a roasting pan and pour the red wine and vegetable broth around it.
- Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Let the lamb rest for 15 minutes before slicing.
Notes
- For extra flavor, marinate the lamb in the garlic and herb mixture overnight.
- Serve with roasted vegetables or mashed potatoes for a complete meal.
