- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 4 large eggs
- 2 cups cream cheese, softened
- ½ cup sour cream
- 1 tablespoon vanilla extract
- ½ cup lemon juice
- 2 tablespoons lemon zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add in sugar, then beat in eggs one at a time.
- Mix in sour cream, vanilla extract, lemon juice, and lemon zest until fully combined.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set. Allow to cool, then refrigerate for 4 hours or overnight.
- Serve chilled and enjoy!
