- 1 large whole wheat wrap
- 1 cup roasted bell peppers
- 1 cup roasted zucchini
- 1 cup roasted carrots
- 1/2 cup hummus
- 1/4 cup feta cheese (optional)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the vegetables and place them on a baking sheet.
- Drizzle with olive oil, salt, and pepper, and toss to coat.
- Roast in the oven for about 20-25 minutes until tender.
- Spread hummus on the whole wheat wrap.
- Layer roasted veggies on top of the hummus.
- Add feta cheese if desired.
- Wrap tightly, slice in half, and serve.
Notes
- For added flavor, marinate the vegetables before roasting.
