- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
- Add the chopped spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, mix the cooked spinach with feta cheese and oregano. Season with salt and pepper.
- Cut a pocket into each chicken breast andstuff with the spinach-feta mixture.
- Place stuffed chicken breasts in a baking dish and bake for 25-30 minutes until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- Use toothpicks to secure the chicken pockets if necessary.
- Great served with a side of quinoa or a simple salad.
