- 1 cup brown sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 pre-baked pie crust
- 1 cup whipped cream
Instructions
- In a saucepan, whisk together brown sugar, cornstarch, and salt.
- Add milk gradually, whisking until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens.
- In a bowl, whisk egg yolks, then slowly add a bit of the hot mixture to temper the yolks.
- Return the yolk mixture to the saucepan and cook for an additional 2 minutes.
- Remove from heat and stir in butter and vanilla.
- Pour filling into the pre-baked pie crust and let it cool. Refrigerate for at least 4 hours.
- Top with whipped cream before serving.
Notes
- For a richer flavor, consider adding a pinch of nutmeg.
- Store leftovers in the refrigerator.
