- 2 cups all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated zucchini
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix flour, cocoa powder, baking soda, and salt.
- In another bowl, combine sugar, brown sugar, eggs, oil, and vanilla until smooth.
- Stir in the grated zucchini.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
Notes
- For extra moisture, you can substitute applesauce for some of the oil.
- Store in an airtight container for up to one week.
- Add nuts for a crunchy texture.
