Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine sugar, brown sugar, eggs, oil, and vanilla until smooth.
  4. Stir in the grated zucchini.
  5. Add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing.

Notes

  • For extra moisture, you can substitute applesauce for some of the oil.
  • Store in an airtight container for up to one week.
