- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 can (21 ounces) cherry pie filling
Instructions
- In a mixing bowl, combine the graham cracker crumbs and melted butter, and press it into the bottom of a 9-inch springform pan.
- In another bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
- Pour the cheesecake batter over the crust and smooth the top.
- Refrigerate for at least 4 hours, or until set.
- Once set, top with cherry pie filling before serving.
Notes
- For a firmer cheesecake, refrigerate overnight.
- Feel free to substitute the cherry topping with other fruits like strawberries or blueberries.
