- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 4 carrots, sliced
- 3 celery stalks, sliced
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 2 bay leaves
- 1/2 teaspoon thyme
Instructions
- Preheat the oven to 350°F (175°C).
- Season the roast with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and brown the roast on all sides.
- Transfer the roast to a roasting pan, add the chopped vegetables around it.
- Pour the beef broth and Worcestershire sauce over the roast and vegetables.
- Add bay leaves and thyme.
- Cover and roast in the oven for 3-4 hours, or until the meat is tender.
- Remove the roast and let it rest before slicing.
- Use the cooking liquid to make gravy.
