Ingredients

  • 1 pound chicken breast, sliced
  • 4 slices turkey bacon, chopped
  • 2 cups mixed vegetables (bell pepper, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Remove the bacon and set aside.
  4. In the same skillet, add chicken slices and cook until browned.
  5. Add garlic and ginger, and stir-fry for 1 minute.
  6. Add mixed vegetables and stir-fry until tender.
  7. Pour in soy sauce and add the cooked turkey bacon back to the skillet.
  8. Toss everything together and serve hot.

Notes

  • For a spicier kick, add red pepper flakes to taste.
  • This stir fry can be served over rice or noodles.
