Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and sugar.
- Press mixture into a pie pan to form the crust.
- In another bowl, whisk together lime juice, sweetened condensed milk, egg yolks, and lime zest.
- Pour the filling into the prepared crust.
- Bake for 10 minutes, then cool at room temperature.
- Refrigerate for at least 2 hours before serving.
- Whip heavy cream until soft peaks form; top the pie before serving.
Notes
- This pie can be made a day in advance for convenience.
- To enhance the lime flavor, use fresh lime juice.
