- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1/4 cup powdered sugar
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, and powdered sugar. Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15-20 minutes until lightly browned.
- While the crust is baking, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt in a bowl.
- Pour the lemon mixture over the baked crust and return to the oven for another 20-25 minutes.
- Let cool completely before cutting into squares and dusting with powdered sugar.
Notes
- For an extra lemony flavor, add more lemon zest.
- Serve chilled for a refreshing treat!
