- 4 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup unsalted butter, cubed
Instructions
- In a medium saucepan, whisk together the eggs, sugar, lemon juice, and lemon zest until smooth.
- Place the saucepan over medium heat and stir constantly until the mixture thickens and coats the back of a spoon.
- Remove from heat and strain the mixture through a fine-mesh sieve into a bowl.
- Add the cubed butter and stir until melted and smooth.
- Transfer the lemon curd to a clean jar and let it cool before sealing.

- Store in the refrigerator for up to 2 weeks.
- This lemon curd can also be used as a filling for pastries or a topping for desserts.
