  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes
  • 4 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 can kidney beans, drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1 cup pasta of choice
  • 1 cup spinach, fresh
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic; sauté until translucent.
  3. Add diced chicken ham, tomatoes, vegetable broth, carrots, celery, and seasonings; bring to a boil.
  4. Reduce heat and simmer for 15 minutes, then add pasta.
  5. Continue to cook until pasta is tender, then stir in spinach and crumbled turkey bacon before serving.

Notes

  • For added flavor, serve with grated Parmesan cheese on top.
