- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 cloves garlic, minced
- 2 cups diced tomatoes
- 4 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 can kidney beans, drained and rinsed
- 1 teaspoon Italian seasoning
- 1 cup pasta of choice
- 1 cup spinach, fresh
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon until crisp. Remove and set aside.
- In the same pot, add olive oil, onion, and garlic; sauté until translucent.
- Add diced chicken ham, tomatoes, vegetable broth, carrots, celery, and seasonings; bring to a boil.
- Reduce heat and simmer for 15 minutes, then add pasta.
- Continue to cook until pasta is tender, then stir in spinach and crumbled turkey bacon before serving.
Notes
- For added flavor, serve with grated Parmesan cheese on top.
- This soup pairs well with crusty bread.
