Instructions
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press mixture into the bottom of a 9-inch springform pan to form the crust.
- In another bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Pour the cream cheese filling over the crust and spread evenly.
- Refrigerate for at least 4 hours, or until firm.
- Top with fresh fruit if desired before serving.
Notes
- For best results, use room temperature cream cheese to avoid lumps.
- This cheesecake can be made a day in advance for convenience.
