- 8 ounces penne pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, sauté for about 30 seconds.
- Add the cherry tomatoes and cook until they start to soften, about 3-5 minutes.
- Add the fresh spinach and cooked penne to the skillet. Toss everything together and cook until the spinach wilts, about 2 minutes.
- Season with salt and pepper to taste. Remove from heat and stir in the Parmesan cheese before serving.
