Delicious eggplant roll-ups filled with creamy ricotta and spinach.

Ingredients

  • 2 large eggplants
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into 1/4 inch thick slices.
  3. Brush olive oil on both sides of eggplant slices and season with salt and pepper.
  4. Grill the eggplant slices until tender.
  5. In a bowl, mix ricotta, spinach, Parmesan, garlic, salt, and pepper.
  6. Place a spoonful of the cheese mixture on each eggplant slice and roll them up.
  7. Place the roll-ups in a baking dish and bake for 20 minutes.
  8. Serve warm and enjoy!
