- 2 large eggplants
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic, minced
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants lengthwise into 1/4 inch thick slices.
- Brush olive oil on both sides of eggplant slices and season with salt and pepper.
- Grill the eggplant slices until tender.
- In a bowl, mix ricotta, spinach, Parmesan, garlic, salt, and pepper.
- Place a spoonful of the cheese mixture on each eggplant slice and roll them up.
- Place the roll-ups in a baking dish and bake for 20 minutes.
- Serve warm and enjoy!
