  • 2 pounds boneless chicken thighs
  • 4 slices turkey bacon
  • 1 cup vegetable broth

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a slow cooker or Dutch oven, heat olive oil over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
  3. Place the chicken thighs in the slow cooker or Dutch oven.
  4. Layer the turkey bacon on top of the chicken.

  6. Cook on low for 6-8 hours or high for 4-5 hours until the chicken is tender.
  7. Once cooked, shred the chicken and mix with the juices.
  8. Garnish with fresh parsley before serving.
