- 2 pounds boneless chicken thighs
- 4 slices turkey bacon
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika

- 1 tablespoon fresh parsley, chopped
Instructions
- In a slow cooker or Dutch oven, heat olive oil over medium heat.
- Season the chicken thighs with garlic powder, onion powder, paprika, salt, and pepper.
- Place the chicken thighs in the slow cooker or Dutch oven.
- Layer the turkey bacon on top of the chicken.
- Pour the vegetable broth over the chicken and bacon.
- Cook on low for 6-8 hours or high for 4-5 hours until the chicken is tender.
- Once cooked, shred the chicken and mix with the juices.
- Garnish with fresh parsley before serving.

- For added flavor, marinate the chicken in the spices for a few hours before cooking.
