- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup brewed espresso
- 1/2 cup vegetable oil
- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt.
- In another bowl, whisk the eggs, then add the brewed espresso, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Fill the cupcake liners with the batter and bake for 18-20 minutes.
- Let cool before serving.
Notes
- For an extra kick, add chocolate chips to the batter.
- Frost with espresso buttercream for a delicious finish.
