- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup espresso coffee, cooled
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 cup crushed ladyfinger cookies
- 2 tablespoons cocoa powder
- 1/4 cup chocolate chips
Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, espresso, sugar, and vanilla extract. Beat until smooth and creamy.
- Fold in the crushed ladyfinger cookies until evenly distributed.
- Chill the mixture in the refrigerator for at least 30 minutes to firm up.
- Once chilled, scoop out small portions and roll them into balls.
- Roll the truffle balls in cocoa powder and chocolate chips to coat.
- Place the coated truffles on a baking sheet and refrigerate until set.
- Serve chilled and enjoy!
Notes
- For a richer flavor, use dark chocolate chips.
- These truffles can also be dipped in melted chocolate for an extra indulgent treat.
