- 1 cup diced bell peppers

- 1/2 cup chopped sun-dried tomatoes
- 1 tablespoon Italian seasoning
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Instructions
- In a mixing bowl, combine cream cheese, bell peppers, olives, sun-dried tomatoes, and Italian seasoning.
- Mix until well combined.
- Shape the mixture into a log form on a piece of plastic wrap.
- Wrap tightly and refrigerate for at least 2 hours.
- Before serving, roll the log in mozzarella cheese and parsley.
- Slice and serve with crackers.

- This cheese log can be made a day in advance to enhance flavors.
