Instructions
- Cook the rigatoni according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cooled rigatoni, feta cheese, cranberries, and parsley.
- In a separate small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
