Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season filet mignon with salt and pepper, then sear for 3-4 minutes on each side.
  3. Remove the steaks and set aside.
  4. Add mushrooms and garlic to the skillet, cooking until softened.
  5. Stir in the beef broth, scraping up browned bits, then add the heavy cream and Dijon mustard.
  6. Return the filet mignon to the skillet, cooking to desired doneness.
  7. Serve with mushroom sauce drizzled on top.
