Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the almond flour, baking soda, salt, and cinnamon.
- In another bowl, whisk together the eggs, honey (or maple syrup), and vanilla extract.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
