Ingredients

  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, eggs, turkey bacon, bell peppers, green onions, salt, black pepper, and shredded cheese if using.
  3. Mix until all ingredients are well combined.
  4. Grease a muffin tin and pour the mixture evenly into each muffin cup.
  5. Bake for 20-25 minutes or until muffins are set and lightly golden on top.
  6. Allow to cool slightly before removing from the tin.
