- 1 cup cottage cheese
- 6 eggs
- 1/2 cup chopped turkey bacon
- 1/2 cup chopped bell peppers
- 1/4 cup chopped green onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cottage cheese, eggs, turkey bacon, bell peppers, green onions, salt, black pepper, and shredded cheese if using.
- Mix until all ingredients are well combined.
- Grease a muffin tin and pour the mixture evenly into each muffin cup.
- Bake for 20-25 minutes or until muffins are set and lightly golden on top.
- Allow to cool slightly before removing from the tin.

- These muffins can be stored in the fridge for up to 5 days.
