1 unbaked 9-inch pie crust

1 cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tablespoon all-purpose flour

1 teaspoon vanilla extract

1 cup sweetened shredded coconut

¾ cup evaporated milk (or heavy cream)

Instructions

Preheat oven to 350°F (175°C).

In a large bowl, whisk sugar, butter, eggs, flour, vanilla, coconut, milk, and salt until smooth.

Pour filling into unbaked pie crust and spread evenly.

Bake for 45–50 minutes, or until golden and center is set.

Cool completely before serving. Serve plain or with whipped cream/ice cream.
