- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound chicken breasts, diced
- 4 slices turkey bacon, cooked and crumbled
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large skillet, cook the turkey bacon until crispy. Remove and crumble, leaving the drippings in the skillet.
- Add the sliced onion to the skillet and sauté until caramelized.
- Stir in the garlic and thyme, cooking for one more minute.
- Add the diced chicken and cook until browned.
- Stir in the rice and chicken broth, bringing to a simmer.
- Reduce heat, cover, and cook for 20 minutes or until rice is tender.
- Mix in the crumbled turkey bacon before serving.
Notes
- For added flavor, use low-sodium chicken broth.
- Feel free to add other vegetables such as bell peppers or spinach.
