- 1 cup long-grain rice
- 2 cups chicken broth
- 1 pound boneless chicken thighs
- 4 slices turkey bacon
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 cup shredded cheese, optional
Instructions
- In a large skillet, cook the turkey bacon until crispy. Remove and chop.
- In the same skillet, add the sliced onion and sauté until caramelized.
- Add garlic and thyme, cooking for another minute.
- Add chicken thighs and brown on both sides.
- Stir in the rice and chicken broth, bringing to a simmer.
- Cover and cook for 18-20 minutes or until rice is tender.
- Stir in the chopped turkey bacon and cheese before serving.
Notes
- For extra flavor, use homemade chicken broth.
- Top with additional cheese if desired.
