  • 8 slices baguette
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a large pot, heat butter over medium heat. Add sliced onions and cook, stirring frequently, until they are caramelized, about 30 minutes.
  2. Stir in thyme and flour, cook for another minute.
  3. Add wine and scrape the bottom of the pot to deglaze. Then, add the beef broth, salt, and pepper.
  4. Simmer for 20 minutes.
  5. Meanwhile, preheat the oven to 400°F (200°C).
  6. Place baguette slices on a baking sheet, top with shredded Gruyère, and bake until golden and bubbly, about 10 minutes.
  7. Serve the soup hot, topped with Gruyère toast.
