- 6 cups sliced onions
- 1/2 cup unsalted butter
- 4 cups beef broth
- 1 cup white wine
- 1 teaspoon thyme
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices baguette
- 2 cups shredded Gruyère cheese
Instructions
- In a large pot, heat butter over medium heat. Add sliced onions and cook, stirring frequently, until they are caramelized, about 30 minutes.
- Stir in thyme and flour, cook for another minute.
- Add wine and scrape the bottom of the pot to deglaze. Then, add the beef broth, salt, and pepper.
- Simmer for 20 minutes.
- Meanwhile, preheat the oven to 400°F (200°C).
- Place baguette slices on a baking sheet, top with shredded Gruyère, and bake until golden and bubbly, about 10 minutes.
- Serve the soup hot, topped with Gruyère toast.
