- 1 cup green olives
- 1 cup black olives
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 2 cups vegetable oil
- 1 teaspoon garlic, minced
- 1 cup mayonnaise
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the aioli by mixing mayonnaise, minced garlic, lemon juice, salt, and black pepper in a bowl.
- In three separate bowls, place flour, beaten eggs, and breadcrumbs.
- Dip each olive first in flour, then in egg, and finally coat with breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the olives until golden brown and crispy, about 2-3 minutes.
- Remove from oil and drain on paper towels.
- Serve warm with garlic aioli on the side.
Notes
- For extra flavor, add herbs like oregano or thyme to the breadcrumbs.
