- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound boneless chicken breasts, diced
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the heavy cream, stirring to combine, and then add the mozzarella and Parmesan cheeses. Cook until the cheese is melted and the sauce is smooth.
- Return the cooked chicken to the skillet and stir to coat in the sauce.
- Add the cooked penne pasta to the skillet, mixing well to cover all the pasta with the cheesy sauce. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, consider adding Italian herbs to the sauce.
- Feel free to use other types of pasta if desired.
