- 8 medium potatoes, quartered
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix garlic, olive oil, rosemary, salt, and pepper.
- Rub the mixture all over the chicken.
- Place chicken in a roasting pan and surround with potatoes.
- Roast for 1 hour and 15 minutes, or until the chicken reaches a temperature of 165°F (75°C).
- Let rest for 10 minutes before carving and serving.
