  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour three 9-inch round baking pans.
  3. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the buttermilk, vegetable oil, eggs, and vanilla; beat on medium speed for 2 minutes.
  5. Stir in the boiling water until well combined.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks.
  9. For the frosting, combine the coconut, pecans, and remaining ingredients in a saucepan and cook until thickened.
  10. Spread the frosting between the layers and on top of the cake.
