- 1 pound pork tenderloin

- 2 limes, juiced

- 1 cup jasmine rice
- 1 can coconut milk
- 2 cups water
- 1/4 cup cilantro, chopped
Instructions
- Marinate the pork in ginger, lime juice, soy sauce, and honey for at least 30 minutes.
- In a pot, combine jasmine rice, coconut milk, and water. Bring to a boil, then simmer until the rice is cooked.
- Grill or pan-sear the marinated pork until fully cooked, about 6-8 minutes per side.
- Let the pork rest for 5 minutes before slicing it.
- Serve sliced pork over coconut rice and garnish with chopped cilantro.
