- 1 pound pork tenderloin
- 2 tablespoons fresh ginger, grated
- 3 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 cup jasmine rice
- 1 can coconut milk
- 1 cup water
- 1 teaspoon salt
Instructions
- Preheat the grill or stovetop grill pan over medium heat.
- In a bowl, mix ginger, lime juice, soy sauce, honey, and olive oil to create a marinade.
- Place the pork in the marinade and let it sit for at least 30 minutes.
- While the pork is marinating, rinse the jasmine rice under cold water.
- In a pot, combine rice, coconut milk, water, and salt, then bring to a boil.
- Reduce heat, cover, and cook for about 15 minutes until rice is tender.
- Grill the pork for about 6-7 minutes on each side or until cooked through.
- Let the pork rest for a few minutes before slicing.
- Serve the ginger lime pork over a bed of coconut rice.

- This dish pairs well with steamed vegetables or a fresh salad.
- For an extra kick, add red pepper flakes to the marinade.
