- 4 medium zucchinis
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your grill or oven to 400°F (200°C).
- Slice the zucchinis into 1-inch thick steaks.
- In a bowl, combine olive oil, minced garlic, salt, and pepper.
- Brush the mixture onto both sides of the zucchini steaks.
- Place the zucchini on the grill or baking sheet and cook for about 5-7 minutes on each side until tender.
- During the last few minutes of cooking, sprinkle the mozzarella cheese on top and close the grill or oven to melt the cheese.
- Once cooked, remove from heat, garnish with fresh parsley, and serve warm.
Notes
- For added flavor, marinate the zucchini in the olive oil mixture for 30 minutes before grilling.
- You can substitute mozzarella with another cheese like cheddar for a different taste.
