Instructions
- Cook the orzo according to package instructions, then drain and let cool.
- In a large bowl, combine the cooled orzo, cherry tomatoes, black olives, cucumber, spinach, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
