Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the potatoes, then cut them into wedges.
- In a large bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper.
- Add the potato wedges to the bowl and toss to coat them evenly.
- Spread the potatoes on a baking sheet and roast for about 30-35 minutes, or until golden brown.
- Remove from the oven and sprinkle with crumbled feta cheese and parsley before serving.

- For extra flavor, let the potatoes marinate in the lemon mixture for 30 minutes before roasting.
