- 1 avocado, diced
- 1/4 cup capers, drained
- 2 cups cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled or cubed
- 1 tbsp fresh parsley (optional)
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp lemon juice
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt, and pepper in a small bowl or jar.
- In a large bowl, combine tomatoes, cucumber, red onion, olives, avocado, and capers.
- Drizzle the dressing over the salad and toss gently to coat.
- Top with feta cheese and parsley (if using). Serve immediately or chill for 10–15 minutes.
Notes
- Add lettuce for more crunch.
- Top with grilled chicken, shrimp, or chickpeas to make it a meal.
- Use marinated feta or sun-dried tomatoes for a gourmet twist.
