A refreshing Greek salad made with creamy avocado, briny capers, cherry tomatoes, cucumbers, olives, and tangy feta cheese in a homemade vinaigrette.

Ingredients

  • 1 avocado, diced
  • 1/4 cup capers, drained
  • 2 cups cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled or cubed
  • 1 tbsp fresh parsley (optional)
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Whisk together olive oil, vinegar, lemon juice, garlic, oregano, salt, and pepper in a small bowl or jar.
  2. In a large bowl, combine tomatoes, cucumber, red onion, olives, avocado, and capers.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Top with feta cheese and parsley (if using). Serve immediately or chill for 10–15 minutes.

Notes

  • Add lettuce for more crunch.
