- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red onion, minced
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
- Brush salmon fillets with olive oil, and season with salt and pepper.
- Grill the salmon for 6–8 minutes per side or until cooked through.
- Serve the salmon topped with mango salsa.
Notes
- For best results, use fresh ingredients.
- Adjust the spiciness of the salsa by adding more or less jalapeño.
